Soup Can Make You Thin - Book Review

I recently purchased a book called Soup Can Make You Thin by Fiona Kirk and Jean Barr.  This is the second book I own from Fiona and as always it ticks all the right boxes for me!  Last year I purchased another one of her books called 2 Weeks In The Fast Lane, an excellent book on how you can loose weight in 2 weeks and a whole in-depth story on food and what it does for our body.  If you want to know the science and how food affects us then this book is perfect for you.  This book did contain some soup recipes so when I heard that she was working on a new soup book I was over the moon, I love soup, in the winter (and summer!) I usually make a pot a week and freeze for lunches. It's nutritious, filling and tasty so what have you got to lose!

The 10 Day Flab Fighting Soup Diet

This is a nice little addition to the book as it's a plan lasting 10 days advising you of what to eat, morning, noon and night.  It also features some yummy snacks in perfect balance of protein, fat and carbohydrates like oatcakes with salmon and cucumber.  I am going to do this plan over summer to get a bit more beach body ready.

This seems like a really obvious thing to know but sometimes there may be times when you never thought of adding soup so this just ensures you are getting the most out your day.



So first to take a good review is the Light Chicken Soup Recipe with starch.  All soups in the book are labelled with or without starch so you can fit them into your day.  With starch soups are more for during the day and without are for later on, to avoid that dreaded 5pm bloat!

Light Chicken Soup (with starch)

Serves 4


2 chicken things or 4 chicken wings
1 tablespoon of oil
3 celery stalks, finely sliced
1 large onion, peeled and finely sliced
1 medium carrot, scrubbed and finely diced
1.2 litres of chicken stock
100g brown rice
1 teaspoon horseradish sauce (I left this out)
3 stalks of curly parsley, finely chopped
salt and pepper




Method:

  • Roast the chicken pieces in a medium to hot oven until the skins are crisp and the flesh is cooked through while you make the soup.
  • If'you made your own stock and have chicken pieces already cooked, shred/chop the flesh and put aside.
Chopped vegetables

  • Warm the oil, add the celery, onion and carrots and saute gently until the vegetables are tender, around 15 minutes.



  • Add the stock and bring slowly to the boil.



  • Reduce the heat, add the rice and simmer, cover until the rice is cooked, around 30 minutes.
  • Remove the chicken pieces to a board and shred or chop the meat



  • Add the chicken, season to taste and all done.



This is the finished result, was absolutely yummy and has now become a firm favourite for my go to soup. Amazing, filling and full of flavour.  As you can see from the steps above, this is a really simple recipe and doesn't take any time at all.  I find making it with your own chicken stock makes for a much more tastier soup.  Even if you are not interested in the 10 day diet then I would still pick this up for the recipes, it's full of tasty treats like thai prawn noodle, beef broth with pearl barley and spicy meatball soup to name a few!
